Capsicum Chutney – Discovery of the week !

I have been following Aruna’s blog Aaharamonline.com for a few years now because she posts awesome vegetarian recipes. A week back I happened to read her post on “Roasted Red Bell Pepper Chutney” and thought of trying it as an accompaniment for vegetable rava idli. Ofcourse I modified it a bit to fit into my OPOS cooking and I also added/left out a few ingredients. The recipe I used was as follows –

I flashed an onion and yellow capsicum with oil but without water – an OPOS technique.

1/4 C roasted peanuts, 1 TBSP roasted sesame seeds, 2 green chilies, 1 TBSP of OPOS ginger-garlic paste, 1 TSP OPOS Tamarind paste, salt to taste.

Dry grind all the other ingredients in a mixie except the onion and capsicum. Add the onion and capsicum and grind to a smooth paste. You hardly need water as the onion and capsicum provide the necessary water, if need be add some water to grind it to a smooth paste.

Today, I made the same chutney with green capsicum and added 1/4 C of roasted peanuts+Almonds. Rest of the recipe remained the same.

Both the times that I have made this chutney, we have forgotten to take a picture because we were busy polishing it off. It tastes divine !!! For the past week or so, I have been experimenting with traditional food added with a lot of vegetables and the results are quite interesting. Will begin to share some of the recipes and changes that I have made in subsequent posts.

Do try this chutney – it works well as a spread if you like only bread or it can be used as an alternative to the coconut chutney with idli/dosa/adai or even upma. I also tried it as a salad dressing by diluting it just a little bit and it does add taste to the salad too. As a salad dressing though you may want to substitute the peanuts with cashews for that cheese like taste without the cheese :):).

Am sure I will be making this chutney within the next two days and will remember to take a picture to update here. Aruna, thanks for the recipe. Loved it.
