I saved this Facebook post from Dr. Sharad Kasarle almost two years back. The nutritional value in peels is immense. Do read –
Understand nutritive values of peels of vegetables & fruits, which we throw ….
Banana peel … Dopamine ( Parkinson’s and stroke prevention)
Lemon peel … Citrus bioflavonoids ( anti cancer)
Pomegranate peel … Nucleotides ( Urinary inconvenience, prevent frequent urination)
Doodhi peel …. Folate, iron, zinc, fibers ( Anemia, Platelets, constipation, Hyperacidity, Immunity)
Apple peel – 332% more vitamin K, 142% more vitamin A, 115% more vitamin C, 20% more calcium, and up to 19% more potassium than a peeled apple … Not to forget Antiviral, covid fighter QUERCETIN !
Boiled potato with skin can contain up to 175% more vitamin C, 115% more potassium, 111% more folate, and 110% more magnesium and phosphorus than a peeled one
The carrot skin contains concentrated vitamin C and niacin but just under the peel, the next layer, the phloem, also has these vitamins, along with vitamin A. The core of the carrot, the xylem, contains the most calcium, potassium, magnesium and phosphorus
Orange peel also contains good amounts of provitamin A, folate, riboflavin, thiamine, vitamin B6, and calcium . Plus, it’s rich in plant compounds called polyphenols, which may help prevent and manage many chronic conditions, such as type 2 diabetes, obesity, and Alzheimer’s disease
We make chutney of peels from doodhi, turai ( birakai) which is full of fiber and tasty
The list is big….

For a long time, I would remove the outer skin from ginger. I had read somewhere that ginger is washed in acid to remove the soil and other fertilisers etc stuck on it. Now for the past five years I don’t remove the outer skin of ginger since I get it from organic farmers. The list of vegetables that we remove the peel from is endless … all because of the use of pesticides and chemical fertilisers.
Now you see advertisements about “veggie wash” solution 🙄. Another example of human stupidity. First we use pesticides, chemical fertilisers to ensure a “bumper” crop, then we create products to “wash” off the pesticides. Grow the vegetables organically and all you need to do is wash them and eat!!
Growing up in Dehu Road (1970’s), dad always had a vegetable patch … I have eaten beans, peanuts, tomatoes directly from the plant. I loved plonking myself in the middle of this vegetable patch and just plucking anything that caught my fancy. Don’t think many children today have this experience.
The other day I removed the skin from apples before eating them because they are not organic. We miss the organic fruits that Farmer Uncle, Staple Kaka and Sanesa supply whenever we travel. The two most “sprayed” fruits are apples and grapes. I have thrown up a couple of times after eating grapes that were not organic.
Apples are waxed to make them shine :(:(.
We urgently need to get off this pesticide-chemical fertiliser-train. What has happened in Punjab should not happen elsewhere. Do read – The Cancer Train, Bhatinda to Bikaner.
An excerpt from the article above –
Go Organic
It’s not as expensive to go organic… identify genuine organic farmers/sellers and buy from them. Join communities like “Living Without Medicine” to learn about the benefits of eating organic produce.
More than anything else, its plain common sense to eat food the way nature produced it….
