Today is Krishnan’s birthday and since we have given up on white sugar altogether we decided to celebrate this birthday with a Namkeen (savoury) cake.
So breakfast was colourful Rava Idli with vegetables.

For lunch I made Krishnan’s favorite Pongal. I had kept the sweet dish a secret from him. In the morning I made ice cream with cashew nuts, Mango, banana and dates when Krishnan went to take a shower.

Recipe for this ice cream – soak a handful of cashews in hot water and use a mixer grinder to make it into thick cashew milk, to the same milk add one banana and one ripe mango. Again purée them well. Purée dates to get some sweetness or add jaggery. Put the entire mix together and let the mixer grinder run for a couple of minutes. Pour it into a glass container and freeze.
I didn’t want it to be totally frozen so I kept it in the freezer for about 3 hours and got a creamy consistency.
