A couple of days back, I made Lasagna at home using bread slices that were rolled out thin. While the taste was not exactly like lasagna at an Italian restaurant, it was not bad. I had home made Tomato sauce and for the white sauce I used diluted Cashew paste. The recipe I used is from Tarla Dalal – Bread Lasagna.
My process was as follows –
Amma had made tomato chutney and I diluted it into a sauce like consistency. For the white sauce, I used diluted Cashew paste. Took a square steel dish. First applied a liberal layer of butter at the bottom, then poured 2 TBSP tomato sauce, followed by 2 TBSP cashew sauce. Took four slices of bread and removed the corners.
Rolled out the bread slices individually, like rolling a roti. Placed them in a single layer on top of the sauces. Then poured another 2 TBSP each of the tomato sauce and cashew sauce.
I had OPOSed two cups of veggies with some basil, paprika, pepper and salt. Veggies that I used – Onions, Zucchini and Capsicum.
After the first layer of bread and sauces, I put in a layer of Amul diced mozzarella cheese. I think this was a mistake, I should have used the Cheese slices instead. The OPOSed veggie layer came next, then another layer of bread and sauces. The second layer of bread was also topped with veggies and covered with a final layer of sauces and bread. In all I used 7 slices of bread.
I covered the top layer of bread and sauces with lots of diced mozzarella cheese. Had already pre-heated the air oven @ 180 deg C for ten minutes. Loaded the Bread Lasagna into the air oven and baked it for 10 minutes @ 180 deg C. While Tarla Dalal’s recipe says to bake it for 20 minutes, I could see the top layer was brown already at 10 minutes. Maybe if I had used the cheese slices, it would have taken longer to get browned.

I guess this recipe was a hit because even Amma ate it. She doesn’t like bread at all, but she liked the taste of the bread Lasagna. Ofcourse Krishnan and I loved it and polished it off.
It’s a very easy recipe to follow and tastes really good. Guess it’s a tasty way to eat veggies :):).
Ofcourse make adjustments as per taste. Krishnan and I tried it with Veeba Tomato chilli sauce because we like spicy food and it tasted really good.
